Food processing means the actions performed on raw products (primary production) to produce products with improved characteristics e.g safety and digestibility, color, texture, taste. The processing includes washing, peeling, chopping, squeezing, etc. while further processing includes smoking, salting, aging, drying, marinating, extraction, extrusion or a combination of these methods. The food processing machines have helped in their mass production, in the simplification and in the shortening of the processes, at the same time ensuring a longer life of the products.

The processing of the primary sector includes small and big industries of packaging and processing of products, i.e production plants such as: agricultural, meat and poultry, fishery and fish farming, as well as food processing facilities.

All kinds of farmers and the processing industry work directly with each other to meet the demands of all consumers for Organic – Traditional – Local and Fresh products thus satisfying the gastronomy of the final consumer.

Mass production and processing still play an important role in ensuring that consumers living in large urban centers have access to food, otherwise they would be limited to what is produced locally. The main feature of the processing is that, as raw materials, it uses products of the primary sector and after processing gives as a result, food safe for consumption.
